Position Overview

We are currently seeking a talented and detail-oriented Demi Chef de Partie specializing in Pastry & Bakery. In this role, you will be responsible for preparing and presenting high-quality desserts, baked goods, and pastries that meet the brand’s standards in taste, appearance, and quality. Working closely with the Pastry Chef and broader culinary team, you will ensure that each item reflects the level of excellence expected at JW Marriott.

As a Demi Chef de Partie, your focus will be on consistently delivering delicious and artfully prepared baked items, assisting with inventory management, maintaining hygiene standards, and mentoring junior staff where needed. You will take ownership of your section, contribute to innovation in recipes and techniques, and play an integral part in the day-to-day pastry operations.

Key Responsibilities

  • Prepare, bake, and decorate a wide variety of pastries, desserts, bread, and other baked goods in accordance with standardized recipes and presentation standards.
  • Maintain control over ingredients, portion sizes, and food presentation to ensure consistency in quality and taste.
  • Regulate and monitor baking temperatures, oven times, and production methods to ensure top results.
  • Support the execution of special menus, seasonal offerings, and signature dessert presentations.
  • Thaw, portion, and prepare ingredients properly and in advance for seamless service.
  • Monitor and record food quality and quantity, ensuring minimal waste while maintaining sufficient supply.
  • Assist with ordering, inventory control, and storage of ingredients, ensuring all items meet quality and safety standards.
  • Maintain a clean, organized, and sanitized work area in compliance with all food safety and hygiene protocols.
  • Communicate any issues regarding stock levels, equipment functionality, or staffing to supervisors promptly.
  • Work collaboratively with fellow chefs and kitchen team members, providing assistance during peak service periods.
  • Participate in regular kitchen cleaning schedules and deep-cleaning tasks.
  • Uphold all Marriott standards for food preparation, hygiene, and guest service.

Leadership & Development

  • Serve as a role model to junior kitchen staff and assist in their training and development.
  • Provide feedback and coaching to junior team members, helping to maintain a positive and productive kitchen culture.
  • Demonstrate flexibility and a willingness to take on additional tasks as directed by the Executive Chef or Sous Chef.
  • Support in the evaluation and motivation of team members when requested.

Preferred Qualifications & Skills

  • Education: Technical, Trade, or Vocational School Diploma in Culinary Arts, with a focus on Pastry or Baking preferred.
  • Work Experience: Minimum of 3 years in a pastry or bakery role within a high-end hotel, fine dining restaurant, or luxury hospitality environment.
  • Certification: Food safety and hygiene certifications preferred.
  • Skills: Strong attention to detail, creativity in dessert presentation, excellent time management, and a passion for innovation in the kitchen.
  • Interpersonal: Positive team player, strong communication skills, and a service-driven mindset.

Physical Requirements

  • Ability to stand, walk, bend, and perform physical duties for extended periods.
  • Capable of lifting and moving items weighing up to 25 pounds without assistance.
  • Comfortable working in hot, cold, and humid environments typical of a professional kitchen.
